Baguette "industrielle"/"Industrial" baguette
Je ne boulange que rarement avec la farine NON bio, mais de temps en temps par "curiosité professionnelle" je teste une farine "industrielle". Cette fois-ci j'ai testé une farine de grande marque de boulangerie. D'habitude, je trouve le pain fait avec cette farine immonde... j'ai le droit de le dire, je ne donne pas le nom de la marque! ;-) Alors j'ai décidé de faire une baguette faite sur levain + une touche de levure, 65% hydratation, retardée 5 heure au frais, puis façonnée, levée et cuite à 250°C. Je ne vais pas donner la recette,elle n'a rien de spécial. J'avais juste envie de dire que la farine était bien plus facile à travailler que la farine bio meulée sur pierre et le goût était tout à fait acceptable! Ma famille a adoré. J'aurais du prolonger l'apprêt un peu, mais comme je ne suis as habituée à cette farine, je n'ai pas osé. Tant pis! Ce n'est pas pour ça que je vais laisser tomber MA farine!
Only rarely do I make bread with non-organic flour and if I do it's from "professional curiosity". I like to test "industrial" flour. This time I wanted to test a famous brand of bakery flour. I find bread made with this flour in bakeries essentially inedible... I can say it, I'm not saying any names! ;-) So, I decided to do a baguette with sourdough, some yeast, 65% hydration, retarded 5 hrs, shaped, risen and baked at 250°C. I won't give the recipe, it's nothing out of the ordinary. I just wanted to say that the flour was much easier to work with than organic stone-ground and the taste was more than acceptable. My family loved it! I should have let it rise a bit more before baking, but I'm not used to this flour and didn't dare. Oh well, next time. But, I'm not giving up MY flour!
